Energy Bites… 4 Batches Worth

I originally saw these little gems on Money Saving Mom and traced the recipe back to Smashed Peas and Carrots.  Hop on over there to find the recipe.

I’m just here to tell you that they are fabulous!  Really, really good.  A lot of goodness.

I made 4 batches before they lasted long enough for me to get a picture.  And I kid you not, as I was taking the picture, my son walked up and reached for one (as he was politely asking if he could have it, of course).

They’re called Energy Bites, but they taste like chocolate chip oatmeal cookie batter.

We’ve been keeping them in the freezer and eating them straight from there. I stick 2 in the kids’ lunchboxes each day, so by the time lunch rolls around, they’ve softened up enough for their brace-filled mouths to eat them without being sore.  Me, I just pop ‘em straight from the freezer.
