Chocolate Granola Bars

I’ve been obsessed with Hershey’s No-Bake Cookies since I was a little girl.
 

 

In fact, when our church put together a cookbook, that was the recipe I had to submit.  I’m going to guess that I was somewhere around 12 or 13 then, submitting a recipe to a church cookbook.  Mmhhmm.
 

 

But they are terrible for you. I mean it’s sugar and butter and chocolate and peanut butter.
 

 

Oh my goodness, they are SO good. It’s like cookie fudge.
 

 

So when I saw this recipe from Marathon Mom, I knew I had to try it.

 

 
They looked so similar to my beloved no-bake cookies, and while I’m sure they’re still not exactly low-calorie, the ingredients are a lot better for you than packaged granola bars with corn syrup.
 

 

  I’ve made them 3 times already and have mixed up the ingredients each time. I’m a big fan of recipes that I can mix and match ingredients so it doesn’t seem like I’m always making the same thing.
 

 

Plus, they freeze beautifully!
 

 

 

 

Chocolate Granola Bars
 
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1/4 cup butter
  • 1 cup oats (I used quick oats)
  • 2 tablespoons ground flax seed
  • 1/2 cup coconut
  • 1/2 cup chocolate chips

1.  Line an 8×8 square pan with foil.
2. Melt  the butter, peanut butter and honey over medium to low heat, stirring constantly.  Remove from heat once it is melted.
3.  Pour in the oats and the flax seed.  Stir until combined.
4.  Stir in the coconut and chocolate chips.
5.  Pour into the foil-lined pan and place in the fridge.
5. Once they’re firm, you can remove from pan, peel back foil and cut into size you like.

*Variations: Substitute coconut oil for the butter
Cut back on honey if you want
Add raisins
Wait to add the chocolate chips until after the mixture has cooled so they stay solid
Use wheat germ instead of flax seed
Use peanut butter chips instead of chocolate chips (or use half of each!)
Use cocoa powder and omit the chocolate chips

These are sooo good! This is the 3rd time I have made them! This time however I left out most of the butter (used about 1 tablespoon) and added a banana, I also use about 1/4 cup of chocolate chips and a few tablespoons of coco powder. Awesome recipe when I am craving something sweet!

I noticed the original recipe said not to use quick oats but you did and I have both on hand is there a significant difference? Thanks, Carly

@AnonymousNot sure what the difference would taste like, but I've used quick oats every time I've made them and I think they taste great! So do my kids!

I love all recipes that don't have gluten or sugar. I am for sure going to try this one.

@Anonymous I used maple syrup and slightly less than the amount listed.
