Dr. Seuss Treats

* I actually posted this last year in honor of Dr. Seuss’ birthday

and thought I would re-post it since it’s that week again!! *

“This mess is too big and too deep and too tall. We can’t clean it up! We can’t clean it up at all!”

It may be Dr. Seuss who coined this little phrase, but I can just hear my hubby muttering this to himself after one of my days in the kitchen!  He just walks through shaking his head and waiting for the storm to pass!

Thank goodness I still have at least one kid who is young enough to celebrate Dr. Seuss’s birthday in her class!  We were a bit crunched for time with this treat so we made some easy peasy cupcakes to send in!

First we made little Cat in the Hat hats.  We melted some red candy melts and then dipped one end of a large marshmallow in it. After it dried we flipped it and dipped the other end in and then let that dry.  Next I melted some white candy melts and used a pastry bag to piped some rings of white chocolate and then set my marshmallow right in there to stick it all together.  Caution: Use an oven mitt to hold the pastry bag! Melted chocolate is hot, hot, hot!!

While all that was drying and setting and whatnot, I baked some cupcakes. Frosted them in some white buttercream and rolled the edges in rainbow sprinkles.  Then plopped my hats right on top!

Next was as simple as simple can be.  Bought some little glass jars at The Dollar Tree, made some fish signs out of cardstock and lollipop sticks and separated my goldfish.

  3. I love these! I’ve seen other hats that were cute, but too many steps for a last minute person like myself ~ but marshmallows dipped in chocolate, I can handle that!! :) We’re not allowed to send in homemade treats for school, but I may make up some for a special treat for my own kids.

  9. When I was teaching, this was always one of my favorite days. Fathers came to read (others, too, but it was such a treat to have fathers show up!) and there were art projects. We never had any treats as cute as these, though!
