Honestly, guys, I wasn’t trying to withhold it from you or tease you with pictures and then never post it! I’m just totally scatter-brained and couldn’t find it for the past year! But I spent some time this weekend going through some old recipes to figure out what I’m making for Easter this year and I found the recipe that I used for my peanut butter eggs from last year! It’s a newspaper clipping from 2002, so really it’s no wonder I couldn’t find it and I shouldn’t be held responsible. : )
Peanut Butter Eggs
2 packages (18 sheets) graham cracker crumbs, very finely crushed
2 cups creamy peanut butter
12 tbsp. butter, softened
3 cups powdered sugar
Bag of Chocolate Chips (I use the Special Dark ones usually)
In stand mixer, mix graham cracker crumbs, peanut butter, butter and powdered sugar until well combined. Shape mixture into eggs and place on wax paper lined cookie sheets. Place cookie sheets in freezer for one hour. Once they’re completely frozen, melt your chocolate according to the package directions. Place your eggs in the chocolate one at a time and slide a fork under each egg to remove. Set back on wax paper lined sheet to set. You can put sprinkles on before chocolate sets if you want.
