Taco Pizza

We’ve been making taco pizza for years!

It’s one of those funny meals that every time we have it, we all love it, but for some reason it could easily be a year or so before we have it again!  Probably because it’s another meal that started with me just trying to use up leftovers rather than something that’s “the first meal”.  Any other families use that phrase??   We have our “first meal” and then use the leftovers for the next meal!  But, hey, if that means eating taco pizza every once in awhile then, no problemo!

 

It also means, that this meal can be modified to whatever your family likes or just
whatever leftovers you have from eating tacos the night before!

For this pizza, I took a can of black beans and dumped them into a saucepan over low heat.  Added some cumin, garlic powder and chili powder.  Heated it up and then mashed it all together with a potato masher.  I probably let it simmer for about 8-10 minutes, then I spread it all over the pizza shell.  (*OR, you could just add a packet of taco seasoning to the black beans OR you could just use a can of refried beans if you wanted!)

After the beans are spread on the taco shell, I take the leftover taco meat and spread that on top.  Then add some cheese (I prefer a mixture of colby jack and cheddar).  I bake it at 400 for about 15 minutes, but that all depends on if you’re using a prebaked pizza shell or not, so follow the directions for the shell you’re using.

Once you take it out of the oven, top with chopped lettuce, chopped tomatoes, guacamole and sour cream (I mix my sour cream with some picante first, but that’s up to you).

And I know I’m going to get a ton of emails asking for precise measurements, but there really aren’t any!  If you have 2 tbsp. of taco meat left… spread it on!! If you have 1.5 cups of taco meat left… spread it on!!  It’s a pizza, so just use whatever you have leftover!  If you like black olives and green onions… then add them!  Add dollops of salsa on top if you want!  Have some corn left? Use it!

The entire point is to use your leftovers in a way that it feels like you’re eating 2 different meals!

Never thought to eat a Taco Pizza. I just cooked up taco meat last weekend, know what I am having tomorrow!

I have my own version I make of this too. I love it so tasty! Although... I always add Nacho Cheese doritos... just makes it perfect!

Forget waiting for there to be leftovers (which never happens on taco night around here anyway)! Looks delicious!!

delicious! We make a mexican pizza, with chicken spiced with taco flavoring but we may have to try this variation!
