I’m going to go ahead and just assume that your mornings are somewhat like mine… short on time.
We don’t need to go into any details on why they’re short on time, it’s alright if we just leave it at that.
That’s where these guys step in over and over again to save the day. Every single one of us loves them, which is really saying a lot!
They take about 2 minutes to heat up in the morning, there’s zero clean-up and they keep us full all morning long. Complete winner in my book!
Now try to keep in mind before we start, pretty much any of the ingredients in here can be modified to your tastes or what you have on hand. If you prefer ham or or bacon instead of sausage than just add that! Or leave out the meat entirely! Change the type of cheese. You might prefer more egg than potato or vice versa. It’s entirely customizable, so don’t think my measurements have to be followed exactly. They can be used as a guideline, but you know better than me what your family enjoys!
#1- 36 scrambled eggs
#2- 4 lbs. potatoes, diced and roasted
#3- flour tortillas, I use 24, 10-inch and 10, 6-inch
#4- 1 lb. cheddar cheese, grated
#5- 1.5-2 lbs. ground sausage, cooked
#6- I had leftover cooked peppers and onions that I put on for my husband
#7- clean cutting board to assemble
#8- clean cookie sheet to place rolled up burritos to flash freeze
It’s really just as simple as layering your ingredients! There’s no measuring or magic ratio!
Once you have them filled, you fold each of the short ends down over the filling.
Holding that in place, you fold one of the sides over. Make sure to keep everything nice and tight.
Fold the other side over to completely enclose your filling and you have yourself a burrito!
Place it seam side down on the cookie sheet and get to work on the rest of them! When you’re done, you have yourself a nice little stack! Put the entire cookie sheet, uncovered, into the freezer for about 30-45 minutes or so. You’re just flash freezing it. When you pull it out, you can put them into a freezer bag and they won’t stick together.
When it comes time to eat them, there’s no need to thaw ahead of time. Just remove from freezer and wrap in a paper towel. Place in the microwave for 1.5-2 minutes and it will be heated through and ready to eat!
I paid a little over $24 for my ingredients and got 34 burritos. Let’s just round up and say I paid $25… that still comes out to only 74 cents each!! Not too bad in my book!
