S’mores Cookie Cupcakes

‘Tis the season for s’mores, and nobody knows how to go more hog-wild over a theme than this girl here!

So you say it’s summer and you’re craving a s’more?? Well, then I will turn everything possible into a s’more!  And I will try my hardest to say s’more as many times as possible in one post, apparently!

This little variation actually came about because I was going to make my favorite double chocolate chip cookie recipe and I wanted to jazz it up a little!  Let it pretend that it was wearing some high heels and going out for a night on the town.  Or at least down to hang out in the local elementary school faculty room. Kinda the same thing, right??

S’mores Cookie Cupcakes

Graham Cracker Crust
1 1/2 cups graham cracker crumbs (finely processed)
1/4 cup sugar
5 tbsp butter, melted

Cookie Layer
2/3 cup shortening
1 1/2 cup sugar
2 eggs
2/3 cup sour cream
1 tsp. vanilla extract
2 cups all-purpose flour
1/2 cup cocoa
1/2 tsp. baking soda
1/2 tsp. salt
2 cups miniature chocolate chips

1 bag regular-sized marshmallows

Preheat oven to 350 and line standard size cupcake pans with liners.

In a small bowl, stir together the graham cracker crumbs, sugar, and melted butter until combined. Put about 1 tbsp. in each cupcake liner and press down with the back side of a spoon.  Bake at 350 for about 5 minutes.

Meanwhile, for cookies, cream shortening and sugar in a bowl until light and fluffy.  Beat in eggs, sour cream and vanilla.

In a separate bowl, stir together flour, cocoa, baking soda and salt.  Add to shortening mixture and mix well.  Stir in chocolate chips until incorporated but do not overmix.

Once the graham crusts are done baking, drop about 1-2 tbsp. cookie dough into cupcake liners and bake for about 9 minutes until they’re puffed up and look like they’re just beginning to set.

Remove from oven and set your oven to broil.  Place one marshmallow on top of each cookie and broil until golden brown and just starting to burn. Watch carefully because it doesn’t take long!

Enjoy warm from the oven!  Or you can reheat in the microwave for 10-15 seconds if you plan on eating them later!  Much better when they’re warmed up, though!

Doesn't Float my boat- oh my boat is Rockin for this goodness! WOW! Break me off a piece of that! Why do you do this to me! Now I want this.. NOW! Oh and amazing photos- I have to ask..what kind of camera do you have..it rocks!
