This is probably an appropriate time for me to apologize.  I’ve been holding out on you guys for awhile now. I have discovered the perfect brownie recipe, and have finally decided that it’s time to share it!

When a brownie is perfect, it’s one of the best treats I can think of. I’m not a fan of cake like brownies, and I’ve had some fudgy ones that are so fudgy they’re practically batter.

These brownies are right in the middle with a little swing towards the fudgy side.  They are incredibly decadent, so cut those pieces small!

When I say they are decadent, I mean on their own, with no topping, eat these with a glass of milk (says the girl who won’t drink milk!).  But I’m going to go ahead and add my cookie dough layer, because I’m a nut like that.  I’ve had a number of cookie dough brownies in my life, and most are almost gritty sugary or else the cookie dough layer is so thick that it overwhelms the brownie. I’ve played around with the recipe a bit and come up with my favorite version of it!

 

Cookie Dough Brownies

  • 6 tbsp. cocoa powder
  • 1 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 cup flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • Cookie Dough Layer:
  • 1 stick butter (softened)
  • 1/4 cup sugar
  • 1/2 cup brown sugar (packed)
  • 2 tbsp. milk
  • 3/4 cup flour
  • 1/2 cup mini chocolate chips
  • Chocolate Layer:
  • 2 oz. chocolate chips
  • 1 tbsp. butter
  1. Brownies:
  2. Melt cocoa and butter in pan until smooth. Remove from heat. Add sugar gradually to mixture until well combined. Add eggs and stir well. Combine all remaining dry ingredients and then add to cocoa mixture.
  3. Pour into greased 8×8 pan and bake at 350 for 20-25 minutes.
  4. Cookie Dough Layer:
  5. With a mixer, beat butter and both sugars until light and fluffy. Add the milk and combine well. Stir in flour until thoroughly incorporated and then stir in chocolate chips. Spread over cooled brownies. Refrigerate while you make the glaze.
  6. *I don’t always use all of this and just save the remainder for dip for pretzels!
  7. Chocolate Layer:
  8. Melt chocolate chips and butter in small microwavable container. Stir every 20 seconds until it is smooth. Carefully spread over cookie dough layer and then refrigerate until set.
  9. Leftovers should be stored in the fridge!
