This broccoli cauliflower salad recipe is my new obsession for the summer!
My family has been making broccoli salad for years, but for whatever reason, I never make it for just my small family at home. It just seems like it’s reserved for special occasions when the whole extended family descends on a house and gobbles it up.
But then a couple months ago, a friend brought this Broccoli Cauliflower Salad to our house for a get-together and it changed my entire thought process. Why the addition of cauliflower made me realize this could be an every day dish is beyond me, but I’m not questioning it.
I’ve made no secret of the fact that I don’t like turning the oven and stove on during the summer. This is a great way to have a vegetable side dish without using any appliances. I made a large batch the other day and we ate it for about 4-5 days. We were probably pushing the limit on that 5th day, but it’s just sooo good. I couldn’t stop. Honest, it’s like an addiction for me.
- 5 cups broccoli florets
- 5 cups cauliflower florets
- 1.5 cups cheddar cheese, shredded
- 2/3 cup chopped onion
- 1 cup mayonnaise (I always use Hellman's)
- 1/2 cup white sugar
- 2 tbsp. red wine vinegar
- 1/3 sunflower seeds
- Mix mayo, sugar and vinegar in large bowl. Add broccoli, cauliflower and onions and toss to coat evenly.
- Cover and refrigerate for 1 hour to let the flavors meld before eating.
- Sprinkle with sunflower seeds before eating.
That’s it, guys! It couldn’t be any easier!!
Alright, I admit, I do make it a little easier. I just add the sunflower seeds with the other ingredients and mix them all in. Figure out which way you like best!
You also can add cooked, crumbled bacon if you’d like. Probably about 6 strips would do. I don’t add it, because bacon is expensive and I like having meatless side dishes.
Also, this makes a LARGE batch for a party. Feel free to cut everything in half if you don’t have many people to serve.
