We’re big on basic things that we can modify here in this house.

Sometimes it’s a basic white shirt that goes with a pair of jeans or can be dressed up with jewelry and a jacket for a different look.

Sometimes it’s a garland that has cheery bright colors for summer and can be flipped over for Halloween with dark, scary colors.

A lot of times, it’s a recipe that can be tweaked and altered to feel like it’s many different recipes!

Cake Mix Chocolate Chip Cookie Bars with only 4 ingredients

The one I’m sharing today for Cake Mix Cookie Bars is pretty much the definition of that.

These are so simple that my kids can make them without any help from me, my husband hasn’t screwed them up yet and I never even have to look up the recipe anymore. It’s just memorized, mixed and in the oven in about 5 minutes. And as you can see from the photo, we don’t even really wait for them to cool before we dig in!

Here are some of our favorite variations, but get wild and come up with your own! Sometimes I do half-and-half toffee bits and chocolate chips with a yellow cake mix. Sometimes I just throw random things in that I find in my pantry! We found some raspberry chips at our bulk food store that were great with a yellow cake mix! We aren’t big red velvet fans, but if you are, that would go great with vanilla chips!

This time, I was out of chocolate chips, but had some chocolate wafer chips I found so that was our winning combo for this day!

Ingredients

  • 1 box yellow cake mix
  • 2 eggs, lightly beaten
  • 7 tbsp. butter or margarine, melted
  • 2 cups add-in, we use chocolate chips the most

Instructions

  1. Preheat oven to 350.
  2. Mix cake mix, eggs and butter until thoroughly combined. Stir in chocolate chips. Spread into a greased 13x9 pan and bake for about 20 minutes.

Here is a REALLY dumb question. Do you mix the cake mix as directed on the box and THEN add the 2 additional eggs? When I added the mix, plus 2 eggs, plus butter the mix didn't completely dilute.

You just add the dry cake mix and then the rest of the ingredients that I mentioned (not the ingredients on the box). I'm not sure what you mean exactly by diluted, but the batter will be very thick (like a cookie batter). It bakes up nice and moist, though!
