For some reason, this raspberry thumbprint cookie recipe starts making its rounds in time for the Christmas season. Such a bad rap, though, because it really should be enjoyed year-round.
I totally get that some cookies lend themselves well to being known as Christmas cookies- snowballs, holiday cut-outs, maybe even cookie fudge bars. But for the most part, I’m a proponent of year-round cookies.
Let them shine in May too is my motto!
Really, December is just crazy town for me and May is a little calmer, so you’ll be seeing some of my favorite cookies making the rounds in the next couple weeks. Learn to live with my quirkiness. My family will tell you, there is really no other way.
The only other thing that really needs pointed out before we get to the actual recipe, is USE THE ALMOND EXTRACT!
If you don’t have it on-hand, buy it. It is not expensive and you will fall so in love with it after this recipe that it will quickly become a staple. Honestly, the almond extract makes all the difference in these buttery shortbread cookies.
- 1 cup butter, softened
- ⅔ cup sugar
- ½ tsp almond extract
- 2 cups flour
- ½ cup raspberry jam
- ½ cup powdered sugar
- ¾ tsp almond extract
- 1 tsp milk
- Preheat oven to 350.
- In a mixing bowl, beat butter and sugar until smooth. Mix in ½ teaspoon almond extract. Mix in flour until dough forms a smooth ball.
- Roll dough into 1½ inch balls, and place on ungreased cookie sheets. Using your thumb, press down into the center of each ball to make a small indent. Fill each thumbprint with jam.
- Bake for 12 to 14 minutes, or until lightly browned. Let cool 1 minute on the cookie sheet.
- In a medium bowl, mix together the powdered sugar, ¾ teaspoon almond extract, and milk until smooth. Drizzle lightly over cookies.
These cookies look delicious and will melt in your mouth! Don’t be afraid to try them with a different flavor jam too. I’ve made them with strawberry jam many times!
