I feel like I’m channeling a little Wicked there. Go ahead, sing to your popcorn, “Because I knew you. I have been changed for good!”

It is that good. You will be belting out Broadway tunes while simultaneously trying to find the best hiding spot in your house so you can hoard it to yourself.

I’m not even a huge popcorn lover. My husband is. Holy goodness, is that man a popcorn freak. He even asks for tubs of it for Christmas gifts. Lame-O.

Unless it was a tub of this peanut butter popcorn. That would take him straight from Christmas Gift Loser to King of the Mountain.

I actually found a recipe for peanut butter popcorn on another site, but it contained corn syrup and I’m trying to avoid that as much as I can. Don’t get me wrong, there is nothing that can replace corn syrup in the gooey, caramely goodness that is sticky bun topping. But I was thinking there was a way that I could avoid it here.

So what else would give us that ooey, gooey-ness that we wanted but not overpower the peanut butter flavor? Marshmallows!!

They worked perfectly and we’ve enjoyed this treat once a week in the month since I made it originally. Yanno, recipe testing and all that. ; )

Peanut Butter Popcorn

Peanut Butter Popcorn

This gooey peanut butter popcorn is the perfect combination of salty and sweet!

Prep Time 5 minutes
Cook Time 20 minutes
Total Time 25 minutes

Ingredients

  • 2 3.5 ounce bags of microwave popcorn, already popped
  • 1/2 cup 1 stick margarine or butter
  • 3/4 cup brown sugar
  • 1/2- 3/4 cup smooth peanut butter, depending on how strong you want the peanut butter flavor to be
  • roughly 20 large marshmallows

Instructions

  1. Preheat oven to 225.
  2. In a microwave-safe bowl, add margarine, brown sugar, peanut butter and marshmallows. Microwave in 1 minute increments, stirring in between, until completely melted. Stir until completely blended.
  3. Add popped popcorn to bowl, making sure not to add in any unpopped kernels. Stir well until all popcorn is coated. Spread on cookie sheet and bake at 225 for about 20 minutes, stirring halfway through.
  4. You can eat immediately! You can also choose to skip the baking part, but it helps it set up a little more and not be such a sticky mess!

I tried your recipe it is good. I have a couple comments. You want to avoid corn syrup look at the first ingredient on bag of marshmallows. I have used honey instead of corn syrup and it works very well. Also have you looked at the ingredients on a bag of microwave popcorn you can get a microwave popcorn popper and pop 1/2 cup of popcorn that is about right for your ingredients listed. Or you can get my favorite stove top popper called Whirley Pop I swear by them have even given as gifts. If you get a Whirley Pop get some maple sugar off amazon and make kettle corn, yum!

I tried This and it was a disaster! The brown sugar didn’t melt so it’s all crunchy, and the mixture never got soft enough to pour over the popcorn.

Sorry to hear that. It sounds like you have old brown sugar you're using. We actually just had a huge amount of popcorn given to us after a fundraiser 2 weeks ago and I made 3 batches of this recipe and my neighbor made 8 batches. All of them turned out perfectly and she's had people asking her for the recipe since eating it. I would check your measurements and make sure your brown sugar is fresh, because every ingredient in this recipe melts into a smooth syrup that you pour over the popcorn.

I only used 1/2 cup peanut butter, next Ike I think I will add 3/4 cup! This popcorn is sooooooo good!

The coating isn't crispy, but the popcorn still has some crunch to it! We usually devour it within a week, but I would say it should probably be eaten in 2 weeks or less. Enjoy!
