This cheesy taco noodle skillet cooks up quickly and is sure to become a fast family favorite! It’s loaded with flavor and has a noodle base that is easy to throw together on a busy weeknight.
We’re your typical family with teens who spend many afternoons and evenings going to sporting events and just generally running around. But I still have a pretty firm rule that we all eat dinner together. There are exceptions here and there, but for the most part, all four of us sit down and eat dinner together every night.
The key to making this happen is to 1) make recipes that are quick and not very labor-intensive and 2) make sure that dinner is delicious so everyone wants to keep coming back!

You’ll be happy you picked some up, because not only do they cook up firm and fluffy, but they’re a healthy alternative to traditional egg noodles. Because they’re made with egg whites, they’re low in fat and sodium and have no cholesterol. You’ll never find me complaining about that!
But we can’t just skim over the texture of the cooked noodles either. Not only do they cook up firm and fluffy, but they stay that way too. Even when they’re used in soups like Miso and French Onion Soup! Two other favorites around our house!
They’re incredibly versatile and can go way beyond your traditional casserole and stroganoff recipes. We love experimenting with new recipes like Noodles with Kale and Walnut Pesto or my boys’ favorite, Sriracha Cheesy Noodles. There is zero complaining happening when I serve No Yolks noodles in any of their varieties: Broad, Extra Broad, Fine, Kluski, Dumplings, and now Stir-Fry.
I used the Broad noodles for this recipe, because I wanted a wide noodle as the base for the taco toppings. Once the noodles were cooked, I created almost a bowl of the noodles in my skillet by leaving a shallow crater in the center.
Then I filled it with the taco meat and other toppings and let the noodles shine on the outside edges. It’s quick to make, easy to serve and tastes delicious! What more could you ask for on a busy weeknight?!

Cheesy Taco Noodle Skillet
An easy weeknight dinner with a noodle base and covered in taco meat and other toppings!
- 8 oz No Yolks Broad Noodles
- 1 lb lean ground beef
- 1/2 cup onion, chopped
- 1 packet taco seasoning
- 3/4 cup water
- 3 oz. cream cheese
- 1 cup shredded cheddar cheese
- 1 15 oz can black beans, drained and rinsed
- 1 15 oz. can corn, drained
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- green onions, sliced optional
Cook the No Yolks noodles according to package directions.
While the noodles are cooking; in a large skillet, brown the ground beef over medium high heat until cooked through. Drain and then return to skillet
Add the chopped onion, taco seasoning and water to the ground beef and cook for about 5 minutes.
Add the cream cheese and cheddar cheese to the beef mixture. Stir to combine. Cook until the cream cheese is melted.
Add the black beans and corn and heat through an additional 3-5 minutes. Add the tomatoes and heat for 1-2 minutes.
Then transfer the beef mixture to the noodle pot. Layer the noodles into the skillet making a crater in the center. Spoon the beef mixture into the center and garnish with additional cheese, green onions, avocado slices and avocado cream, if desired.
An alternate serving option would be to combine the noodles and beef mixture in one pot rather than layering them.
