Banana Chocolate Chip Bundt Cake with Peanut Butter Frosting Recipe

I’m of the opinion that bananas, peanut butter and chocolate all mixed together is one of the  most glorious flavor combinations ever. Unfortunately, my daughter disagrees. Whomp, whomp.

She honestly cannot stand bananas with peanut butter. It’s the strangest thing to me that she likes them both separately, but won’t enjoy them together. Luckily, my husband and son are on my side, so this banana bundt cake with peanut butter icing doesn’t have any trouble disappearing.

Honestly, it’s really just a base banana bread recipe. I add some sour cream and few other things to make it more moist and cake-like, as opposed to a heavy dense bread. though. But you could easily make this in a loaf pan and cut it into slices.

Or even make individual muffins and then drizzle some of the peanut butter frosting over the muffins. That would be delicious and help with portion control a lot more!

But there’s just something about a bundt cake that I love! Especially when they come smoothly out of the pan. If you’ve ever experienced a bundt cake failure, you need to try my Homemade Cake Release.

I swear by this stuff and have never had a cake stick to a pan since I started using it! And incidentally, it was a bundt cake disaster that led me to discovering this recipe!

But once I discovered it, I never looked back. You can make it with 3 easy ingredients that you probably already have on-hand. It is so much cheaper than buying cooking spray, and I swear it works better.

Tips to Make Banana Bundt Cake

  • Be sure to sift your powdered sugar first so that you get a nice smooth finish to your frosting. I use a basic sifter, so this goes really quickly!
  • I buy very ripe bananas at the grocery store for a discounted price (usually 19 cents/lb), and then store in my freezer until I’m ready to use.
  • You can use 1/4 applesauce and 1/4 oil in place of the 1/2 cup of oil in the recipe.
  • This recipe doubles very well if you want to freeze one (unfrosted) for a later date.
  • If you prefer your peanut butter frosting to be more of a glaze, just add a little more milk until you reach the desired consistency. It own’t affect the flavor at all!
  • A chocolate drizzle over the peanut butter icing would really make this a company-worthy cake!
  • Leave out the chocolate chips if you don’t have them on-hand. I’m off the opinion that they make everything better, but it isn’t a deal breaker if you don’t include them!
