These Easy Irish Potato Nachos are the perfect dinner or appetizer for St. Patrick’s Day. Roasted potato rounds are topped with cheese, sour cream and chicken for a filling and delicious treat!

There’s an Irish pub in Gettysburg that we visited a few years ago that serves Irish Nachos that are to die for. We had them one time, and we were instantly hooked!

I’m not exactly sure how officially Irish they are, but they’re potatoes so I’m telling myself that the pubs in Ireland all serve these. Which, of course, means that they’re fair game when it comes to St. Patrick’s Day entertaining!

We aren’t huge fans of the traditional St. Patrick’s Day food, but these Irish Nachos get inhaled. They are seriously good and even easier to make! Part of the reason they’re so easy is because I use Cooked Perfect® Fire Grilled Chicken. You can find it in the freezer aisle, and I just pop it in the oven at the same time as the potatoes are cooking.

Cooked Perfect Fire Grilled Chicken comes in a variety of unique flavors but I chose Bourbon BBQ for this recipe. If you wanted to experiment with some of the other flavors, you could choose between Buffalo Ranch, Wildflower Honey BBQ, Lemon Herb, Zesty Herbs and Spice, Szechuan, Korean BBQ or just stick with Classic Style.

I really don’t think you could go wrong, but the Bourbon BBQ Chunks pairs perfectly with the potato nachos!

How to Make Irish Potato Nachos

To make these Irish Nachos, start with about 5-6 medium size potatoes. You want to really wash them well to get all the dirt off the outside, make sure you dry them before slicing. The dryer you get them, the crispier they will turn out when you roast them.

I used my mandoline to get perfect ¼” slices. I’m obsessed with my mandoline not just because of the consistency between the slices, but because it makes the job go so much quicker. If you don’t have one, you can just use a sharp knife to cut your potatoes into even slices.

Then I tossed them in a large bowl with some olive oil, rosemary, thyme, salt and pepper. These are traditional Irish flavors and really enhance the flavor of the potatoes. You can use regular table salt if that’s all you have, but I always prefer sea salt. I love the way it sticks to the potato rounds!

Once you have the potatoes coated evenly with the oil and spices, spread onto a cookie sheet. You can line your cookie sheet with non-stick foil or parchment paper depending on what you have on hand. I do recommend lining it, though, because potatoes are notorious for sticking!

I popped them in the oven for 20 minutes. While they were cooking, I spread my chicken on a 2nd cookie sheet in an even layer.

Frozen Bourbon Chicken

After 20 minutes, take your potatoes out and flip them. The timing works out perfectly to put your chicken into the oven at the same time you put your potatoes back in for another 18-20 minutes. Every time I’m cooking and the timing lines up perfectly, I feel like I can hear a choir of angels singing! It’s magical!

Irish Skillet Dinner

Once the potatoes are done, transfer them to a cast iron skillet. I would suggest an 8” or 9” skillet for this size recipe. You can just pile them in or take a little extra time to arrange them accordion style if you want. Presentation matters, especially on holidays! The rest of your meal is convenient thanks to the chicken, so I suggest taking an extra minute or two to make sure those potatoes are a worthy companion of your Bourbon BBQ Chicken Chunks!

Sprinkle some cheese on top and pop them back in the oven for about 3-5 minutes or until the cheese is melted.

Pull them out and top with chopped tomatoes, cilantro, sour cream and the chicken!

I used the chunks of chicken for this recipe, because I wanted it to be appropriate for a St. Patrick’s Day meal as well as an appetizer or party food. But there are lots of other cuts available including wings, bone-in and boneless thighs, tenders and drumsticks.

Pick the one that would work best for your family’s meal! If you plan to serve it as a meal instead of as an appetizer, the tenders would work really well too!

Easy Irish Potato Nachos

Irish Potato Nachos

These easy Irish Potato Nachos are loaded with chicken, cheese, sour cream, tomatoes and more! Perfect for a dinner or to serve as an appetizer!

  • 6 potatoes (medium sized)
  • 3 tbsp olive oil
  • 1 tsp dried rosemary
  • 1/2 tsp dried thyme
  • salt and pepper (to taste)
  • 1 cup cheddar cheese (grated)
  • 22 oz Cooked Perfect Fire Grilled Chicken (Bourbon BBQ chunks)

Optional Toppings:

  • sour cream
  • tomatoes (chopped)
  • cilantro
  • green onions (chopped)
  • jalapenos
  • black olives
  1. Preheat oven to 400 degrees. Line a large cookie sheet with non-stick foil or parchment paper.
  2. Wash potatoes and dry well. Slice into 1/4″ slices and place in large bowl. Add olive oil, rosemary, thyme, and salt & pepper to bowl. Stir well until evenly coated. Then spread potato slices onto lined cookie sheet. Bake for 20 minutes
  3. Remove from oven and flip over. Put back in oven for another 18-20 minutes. At the same time, place chicken on a 2nd cookie sheet and cook for 18-20 minutes.
  4. Remove potatoes and chicken from oven. Transfer potato slices to a cast iron pan. Sprinkle with cheese and return to oven for 3-5 minutes or until cheese melts.
  5. Remove from oven and top with chicken and the toppings of your choice!

*Feel free to use other flavors of the Cooked Perfect Fire Grilled Chicken. We just preferred the Bourbon BBQ for this dish.

*If you don’t have a cast iron pan, you can also use a pie dish or 8″ round pan.

Oh no! This chicken really is our favorite chicken for convenience. You could really use any frozen chicken you wanted or just chop up a rotisserie chicken.

Oh my goodness! This looks like an amazing meal. Using Cooked Perfect meats make this such an easy dish that would be perfect for movie night or watching weekend games on tv.
