Tuesdays are one of our busy days since we walk in the door a little after 6:00 and right as my hubby’s coming home too. So I try to have easy dinners that night.
Tonight we had a Tomato Basil Soup that I actually made last May and had in the freezer. I desperately need to go to the grocery store so I only had enough bread for 3 grilled cheese sandwiches and there are 4 mouths to feed in this house. So after I made the sandwiches, I cut them into little crouton-size squares and just piled them on top of the soup. It looked a lot better than giving everybody a plate with 3/4 of a sandwich and they never knew the difference!
My kids said they loved it and asked if we can eat soup like that every time! Normally, when we have this meal, they eat the entire sandwich first and don’t leave any room for the soup! This way, they got some of both in every bite. PLUS… I didn’t have a bunch of greasy hands touching everything afterwards!! SCORE!!
The Tomato Basil Soup recipe is from the book Don’t Panic More Dinner’s in the Freezer. I’m in love with this series of books! I do a lot of freezer meals and these are wonderful because you can pick if you want a single batch, triple batch, etc. It does all the conversions for you! I have 2 of these cookbooks and use them ALL the time!
