Growing up, for my birthday meal, I always asked my mom for barbecue chicken and corn. I love, LOVE, loooove barbecue chicken!
Unfortunately, my husband isn’t the biggest fan of it. I made it once early in our marriage and I distinctly remember him saying, “We don’t have to have this that often, right?”. Wha????
There may have been some tears involved. I was a sensitive soul (still am!), and I knew it wasn’t that I did a bad job… I just married somebody who doesn’t like bbq chicken! Seriously, still in shock all these years later.
But I can get him to eat it in a salad! He actually loves my BBQ Chicken Salad!
BBQ Chicken Salad:
Chopped Romaine Lettuce
1/2 cup Black Beans
1/2 cup canned corn
1/2 cup chopped tomato
1/2 cup shredded cheddar cheese
1/4 cup French Fried Onions
1/2 cup fresh California Avocados, diced
1 grilled, BBQ chicken breast, diced
1/4 cup ranch
2 tbsp. barbecue sauce
All of these measurements are just approximate. Add or take away things to your liking. I load mine with beans and corn, because I just love them! Sometimes I add refried beans or crumbled bacon if we have it. If you don’t have any French Fried Onions, you can bake a tortilla and then cut it into strips for the crunch.
I even like my dressing to be bbq-y, so I mix the ranch with some more bbq sauce to taste. I go easy on the bbq sauce for my husband and put more into my own. All of these measurements are really specific to your individual tastes!
These are the onions I use, because I found them once for 99 cents and loaded up. There might be more tears once I run out of my supply.
