We rotate whose turn it is each week and that person gets to pick what we have for dinner and what we do for our evening activity… usually something along the lines of a board game, family walk, sometimes a game of Twister if it’s a certain 10 year-old girl’s turn!

Family Nights started back when I was a wee little girl (yes, I actually talk like this in real life). We didn’t have a lot of money growing up, but we had a mom who could turn even the most routine, daily activities into something special! So Family Nights were born and I remember them fondly enough that it’s now a tradition for our little family!

Here’s the key to Family Night, though… you want to spend as much time as you can with YOUR FAMILY!!! So you don’t want to be stuck in the kitchen making an elaborate dinner! My kids (and husband) know that when it’s their turn to pick, I want them to choose a favorite, but I also want to be able to enjoy it with them rather than slaving away in the kitchen for hours.

For my daughter’s turn this week, she chose Spanish Chicken & Rice! This girl will eat rice in pretty much any flavor and has it in some form nearly every time it’s her Family Night. I was thrilled with her choice because it’s super fast to make and I found it at Giant Eagle on sale (I know that would make my frugal Mom happy too)!

Spanish Chicken & Rice Recipe

Ingredients
  • 2 tsp. vegetable oil
  • 1 small onion, chopped
  • 2 cups water
  • 1 package Knorr® Fiesta Sides™ – Spanish Rice
  • 1 cup frozen peas and carrots
  • 2 cups rotisserie chicken
  • 1/4 cup pimiento-stuffed olives (optional)
Instructions
  1. Heat oil in large nonstick skillet over medium heat and cook onion, stirring occasionally, 4 minutes or until almost tender. Add water and Knorr® Fiesta Sides™ – Spanish Rice and bring to a boil over high heat. Reduce heat and simmer covered 5 minutes. Stir in green peas and carrots and continue cooking 2 minutes until rice is tender.
  2. Just before serving, stir in chicken and olives.
 

My son’s favorite part is the day after we have this meal, when I turn the leftovers into empanadas for him!

knorr chicken rice calzones spanish All you need is your Spanish Chicken & Rice mixture, a small amount of cheddar cheese and some pizza dough! 1. Pat some dough into into a circle. 2. Fill the one side with a couple tablespoons of the mixture and top with some cheese. 3. Lightly wet the edges, fold the dough over and crimp the seam with a fork. 4. Spray the outside with cooking spray (or lightly brush with oil) and bake at 450 for about 20 minutes.
