I’m a tomato fanatic.
I put tomatoes on nearly everything and sometimes even eat them like an apple! I like them nice and cold and put cold slices on pizza, almost any sandwich, macaroni & cheese… you name it, that little ball of red goodness will make it better!
I’m still waiting for the tomatoes in my garden to ripen, but when they do, I’ll be making tons of this refreshing Tomato and Mozzarella Salad. I could eat it every day, I kid you not.
Tomato and Mozzarella Salad
1 ripe, juicy tomato
fresh mozzarella cheese
Extra Virgin Olive Oil
Basil (fresh or dried)
Salt and pepper
Slice your tomato and mozzarella and layer on a plate. Drizzle with the EVOO and the Balsamic vinaigrette then sprinkle with the basil, salt and pepper.
I do prefer the fresh basil but didn’t have any this time. Sometimes, I also layer it with spinach leaves or sprinkle with pine nuts!
