Cheesy Sweet Potato Stuffed Pepper

This is a great option for a meatless meal!

Ingredients

  • 3 Red bell peppers
  • 1 1/2 Tbsps olive oil
  • 1 Sweet potato cut into small cubes
  • 1/2 Cup scallions sliced
  • 1/2 Cup frozen corn
  • 1 Tbsp salt
  • 1 Tbsp pepper
  • 1 Cup rice
  • 6 Slices mozzarella cheese

Instructions

  1. Preheat oven to 375 degrees.
  2. Chop off bell pepper tops.
  3. Coat with olive oil, cover in foil, and bake for 40 minutes.
  4. Add 1 cup rice to 1 1/2 cups of water in a small saucepan.
  5. Add in all the vegetables and seasonings.
  6. Cook until water is completely absorbed.
  7. Stir together and add the rice and vegetable mix to the bell peppers.
  8. Place 2 slices of cheese on top of each bell pepper.
  9. Turn oven off and let cheese melt with the oven heat.
  10. Serve and enjoy.
