Tomato Feta Pasta

This is a great way to use your fresh tomatoes from the garden! Add grilled chicken or shrimp for an entree.

Ingredients

  • 1 box pasta I used rotini but you can use any shape you prefer
  • 1 tbsp. dried oregano
  • 1 tbsp. minced garlic
  • 1/2 tsp. salt
  • 1/4 tsp. crushed red pepper flakes
  • 1 1/2 tsp. olive oil
  • 1/2 cup chicken broth
  • 2 - 2 1/2 cups chopped seeded tomatoes
  • 1 cup crumbled feta cheese

Instructions

  1. Cook pasta according to package directions.
  2. In skillet, heat oil and then add oregano, garlic, salt and red pepper flakes. Saute for about 1-2 minutes. Add chicken broth and bring to a boil. Reduce heat and simmer for about 2 minutes.
  3. Stir in tomatoes and simmer, covered for 10 minutes. Add feta and drained pasta and stir until well combined and everything is heated through.
