These easy Irish Potato Nachos are loaded with chicken, cheese, sour cream, tomatoes and more! Perfect for a dinner or to serve as an appetizer!
Preheat oven to 400 degrees. Line a large cookie sheet with non-stick foil or parchment paper.
Wash potatoes and dry well. Slice into 1/4" slices and place in large bowl. Add olive oil, rosemary, thyme, and salt & pepper to bowl. Stir well until evenly coated. Then spread potato slices onto lined cookie sheet. Bake for 20 minutes
Remove from oven and flip over. Put back in oven for another 18-20 minutes. At the same time, place chicken on a 2nd cookie sheet and cook for 18-20 minutes.
Remove potatoes and chicken from oven. Transfer potato slices to a cast iron pan. Sprinkle with cheese and return to oven for 3-5 minutes or until cheese melts.
Remove from oven and top with chicken and the toppings of your choice!
*Feel free to use other flavors of the Cooked Perfect Fire Grilled Chicken. We just preferred the Bourbon BBQ for this dish.
*If you don't have a cast iron pan, you can also use a pie dish or 8" round pan.
