Summer Corn and Tomato Salad

You guys hit the nail on the head the other month when you were giving me all my gardening tips!  I was seriously lost and nearly in tears with the way my garden was starting the season.  But thanks to you guys, she pulled herself together and cleaned up pretty well!

Which means, I am left with a huge amount of vegetables!  We planted 11 tomato plants this year and 4 cucumber plants, because we were so sure most of them were going to fail.  We do have a track record to maintain here, people.  But even with all the ridiculous heat and then monsoon like rains we’ve had, they’re still looking half-decent!!

Tomatoes are one of my very favorite things!  I used to eat them like apples when I was a kid, and while I don’t really do that anymore (although my daughter does), I still will put them on nearly anything!  I love a fresh, crisp slice on top of hot pizza, tomato slices with a sprinkling of salt, tomato & mozzarella salad, chopped cold tomatoes in hot macaroni & cheese and on and on!  Tomatoes completely and totally rock in my book!

Coming in a close second is corn!  We haven’t tried our hand at growing corn… mostly because we don’t really have the space for it. But we’re lucky that where we live is surrounded by farms, so it’s pretty easy to find a roadside stand selling fresh ears of sweet, yellow corn!

Corn & Tomato Salad

4 ears corn, cooked and cut from cob
3 tomatoes, chopped
1 cucumbers, peeled, seeded and chopped
2 green onions
3 tbsp. chopped cilantro
2 tbsp. white balsamic vinegar
1 1/2 tbsp. extra virgin olive oil

Mix everything together in large bowl and season with salt.  I like to refrigerate it for a couple hours before serving so the flavors can meld together.

side note:  You’ll notice in the pictures that I didn’t include cilantro.  I was out and just made it anyways, but I do like it better with it!
